Berry Cream Cheese Pie
4 oz. cream cheese, softened
1/2 cup powdered (confectioners') sugar
1/2 cup heavy whipping cream, whipped
Berry Topping
2/3 cup sugar
1/4 cup cornstarch
1/2 cup water
1/4 cup lemon juice
3 cups fresh or frozen berries
(I use blueberries, raspberries, and strawberries)
Graham Cracker Crust
2 cups crushed graham crackers
1/2 cup sugar
1/3 cup melted butter
Directions
Combine crushed graham crackers, sugar, and butter in a bowl until well mixed. Press into a slightly greased 9" pie pan and bake at 400° for 10 minutes. Let cool.*
Refrigerate until served.
*The pie may also be made using a regular pie crust or prepared graham cracker crust.
